Also known as Earth Ginseng or Tu Ren Shen, Surinam spinach belongs to the purslane family. Its crisp, fleshy leaves have a mildly nutty flavour and can be eaten raw or cooked like spinach. The delicately structured pink flowers are very attractive and can also be used as dried flowers.
